Miso

Miso is a classic and iconic food for the Japanese. Miso soup is simple to make and a staple in Japanese cuisine. Please stop in our store for a simple recipe on how to prepare your own miso soup. There are many types of miso but to keep it simple, they are two basic categories. Aka (red) miso is earthy and salty in taste while its counterpart, Shiro (white) miso is mild and sweeter. The middle miso pictured is from the Amano company. The Amano family from Vancouver, still makes it in the traditional way using organic whole soy beans and refrains from pasterurizing the finished product which can compromise the nutritive value of the miso. Most other types are now made with soybean powder and often pasteurized. They are quite good and deliver a smoother texture in your dish. Miso is a broad category in our store and we also carry ready to serve instant product, reduced sodium product and a host of others with choices that include dried tofu, dried seaweed, etc.
