Chicken Donburi

1lb de-boned chicken
6-8 cups of cooked short grain rice
6 green onions
1/2 cup of peas
4 cups dashi (soup stock)
3 tbsp. soy sauce
1 tbsp. sugar
3 tbsp. mirin

Cut green onions into 1 inch lengths. Slice chicken into thin slices. Add together with green onions, peas and dashi. Cook over medium heat for 5 minutes or until the chicken is done. Add soy sauce, mirin and sugar. Add the eggs last and bring to a boil. Once to a boil, cover the pan and turn off heat. Make sure not to overcook the eggs. Fill bowls with cooked rice and pour egg and chicken mixture generously over on top.
